My boyfriend and I recently moved into an apartment together. When moving I came across a prescription bottle labeled amphetamine salts. Ive never taken medications before and I'm curious what amphetamines are.

Amphetamines are what you would call stimulants. They are called that because they stimulate the CNS aka the central nervous system. Amphetamines cause people to experience high alertness, better focus and euphoric feelings.
